This time, our sous chef, Jarrod Attenborough shows you how to make winter kimchi using Glenarty-grown cabbage and a sprinkle of this season’s epicurean treat — dried padron chilli flakes, straight from the garden. These do pack some punch, so feel free to go light if you prefer a gentler ferment.
