V A R I E T Y - 86% Sauvignon Blanc + 12% Muscat + 2% Shiraz
W I N E M A K I N G - cold settled Sauvignon Blanc and Muscat juice was co-fermented in temperature-controlled stainless steel tanks for 10 days. 24g/L residual sugar remained in the ferment when the wine was bottled under crown seal, with bottle fermentation occurring over the next 4 weeks. The wine was then hand riddled and disgorged in order to add a small dosage as well as to regulate sediment and spritz.
M A T U R A T I O N - matured on lees in bottle for a minimum 8 months before hand-disgorging.
