The vineyard continues in the cellar.
When the fruit reaches the cellar, the work changes but the responsibility remains the same: protect what is distinctive about the site, variety, parcel and season.
The menu responds to what the farm is genuinely ready to give. Weather Fermentation, extraction, vessel, maturation and blending are decisions rather than house rules. Each parcel is followed individually from vineyard to bottle., crops fail and abundance arrives all at once; those changes become part of what is served.

Every Glenarty Road wine begins with fruit grown on our farm. Knowing each block, variety and season gives us a direct connection between the decisions made in the vineyard and the wine each parcel might become.
We make our wines at McHenry Hohnen on Rocky Road in Witchcliffe, in collaboration with Japo Dalli Cani and Henry Wynne. Japo and Henry lead the winemaking process in close consultation with Sasha, bringing experience, intuition and a shared understanding of what we want the wines to express.

Every wine is made from fruit grown on our farm, creating a direct line between the vineyard, the season and the finished bottle.
Parcel by parcel

Each parcel is followed individually, with decisions guided by its variety, character and the conditions of that vintage. Fermentation, extraction, vessel and maturation are considered according to what the fruit needs, rather than a fixed house recipe.

Japo Dalli Cani and Henry Wynne lead the winemaking at McHenry Hohnen in close consultation with Sasha, working together to express the cool climate and distinctive character of Karridale.
