| S T O R Y | a small batch sparkling wine that was wild fermented from chardonnay and pinot noir. sealed bottles were delicately lowered ten fathoms into flinders bay, augusta, western australia. the ebb and flow of the seabed naturally stirred the lees for thirteen months, building layers of complexity and texture into the wine. every bottle has been gently rocked by a unique rhythm from the southern ocean’s currents.
*due to the unique and wild nature of ocean maturation, each bottle varies in intensity of sealife encrustation.
| S T Y L E | chardonnay and pinot noir hand harvested from one the most southern vineyards in margaret river. gently pressed to tank for cold settling, followed by a wild co-fermentation in stainless steel. after tirage, the wine was lowered into the ocean for 13 months whilst on full lees for maturation and natural riddling. resurrected from the ocean and gently disgorged with 2.5g/L dosage.
