Your spring wines are here, arriving with longer days, fresh growth and the return of energy across the farm.

Spring began in the vineyard with pruning through July’s settled weather and cold mornings. Now the buds are swelling, the paddocks are unusually green and the garden is moving from winter harvests towards summer planting.

Chamomile custard tart.

The chamomile seeds sent in winter return to the table this spring, infused into a silky custard with crème fraîche pastry and a sweet crunch of Farm Collective honeycomb.

Eggplant waits for warmth.

Start the seeds in a warm spot now, or wait until the soil has warmed before sowing directly. Give them sunshine, rich soil, steady water and room to grow.

As they begin producing through summer, pick the fruit while its skin is glossy and firm. The booklet has the full sowing calendar and garden notes.
