V I N E Y A R D - dry grown on a west-facing site, allowing maximum sunlight inception into the canopy, for ideal cool climate ripening. The lean gravelly ironstone soils craft a wine full of dark fruits and subtle spice.
W I N E M A K I N G - 10 % whole bunch, fermented and matured in amphora on skins for 20 days. Pressed to second fill oak barrels & amphora for 12-month maturation.
M A T U R A T I O N - french oak barriques + amphora for 12 months.
