| S T O R Y | what's not to love about margaret river chardonnay? this wine is a precise expression of the elegance that southern margaret river fruit holds. a wild yet restrained and alluring wine which lingers long after the glass has finished. the acid is bright and the fruit purity is unparalleled thanks to fewer heat degree days than the northern end of the region. only lightly oaked to add texture and depth, this wine has generous fruit weight with a savoury finish. an exercise in finesse and grace.
| S T Y L E | our clone of choice is gingin which offers small yields due to millerandage, with bunches having incredibly small berries amongst some larger berries. free run chardonnay juice was cold settled and wild fermented with slight turbidity in french oak barriques, 20% of which were new. the wine matured in oak for 9 months before it was bottled unfined with minimal filtration.
| W I N E | lemon curd, shortbread, nashi pear skin, white peach, house-churned butter, toasted macadamias. a fine saline thread weaves through from start to finish. a lhint of oak adds texture and lightly toasted notes.
| E N J O Y | pair with roast porchetta, a seasonal salad, fresh sourdough + lashings of homemade butter. alternatively, roast chicken is always a winner.
