"sparkling wine from ancient times"
| S T O R Y | centuries ago, the world was a sad place with a severe lack of bubbles. things rapidly changed thanks to a chance discovery by a monk in southern france. as the springtime temperatures rose, yeast inside the bottles sprung back to life feasting on residual sugar left after the first (primary) fermentation. with the bottles already sealed, the CO2 (carbon dioxide) formed bubbles in the wine and gave birth to the world's first ever bottle of sparkling wine. we'll happily preach the gospel of fizz.
| S T Y L E | muscat rouge à petit grains and sauvignon blanc from the hop block were hand-harvested, cold settled, and fermented in stainless steel at a low temp. nearing the end of ferment the wine was racked clean and bottled the following day. with 1 baume of RS left in the bottle, the yeast continue the fermentation under crown seal resulting in slight sedimentation and tartrate formation.
| W I N E | a fruit-forward and insanely fun wine with a touch of seriousness. think heirloom roses, feijoa, cranberries, pomegranate pearls, and a hint of campari. freshly baked scones loaded with fresh berry jam and cream.
